Joyce Johnston (1926-2018) was a prominent member of the Sydney hospitality industry for more than thirty years and very influential in the emergence of modern Australian food, particularly during her time at Butlers which introduced nouvelle Cuisine to Australia. In the 1970s she worked for McWilliams Wines at the beginning of the modern Australian wine industry. In 1976 she co-founded La Chaine de Rotisseurs in Australia (an international association of gastronomy) and was awarded its gold medal in 1993. She managed and/or co-owned a number of prestigious restaurants including Pavilion in the Park, 1978-1979 and Butlers restaurant, Pott Point, 1979-1988. From 1987 to 1992 she served as NSW president of the Restaurants and Catering Association of Australia and was national president, 1988-1990. She was also involved in wine consulting and lecturing at TAFE. In 2005 she received the Lifetime Achievers Award, Restaurant and Catering Association. She was awarded the Medal of the Order of Australia in 2012 for service to the hospitality and tourism industry, and to the community.

In her last years Joyce Johnston was under the guardianship and care of the donor Jason Shea and his partner who had control of the papers. She had no children or next of kin.
