In 1888, William Henry Paling, a wealthy businessman and philanthropist, generously donated his 500 acre 'Grasmere' property worth £20,000, complete with stock, dairy, irrigation appliances, and two cottages, plus £10,000 to the people of N.S.W. in order to establish the Carrington Centennial Hospital for Convalescents and Incurables at Camden.

The Governor of the day was Lord Carrington and the Deed of Gift was presented to him for the Centenary of the Colony.

When the Carrington Centennial Hospital was opened in August 1890 it was the first public convalescent hospital built in NSW. The historic sandstone/brick building is a landmark in the Camden area.

Over the years the complex has expanded to incorporate Hostel Accommodation as well as Independent Living Units.

In 1982 the Paling Court Hostel was built and consisted of 30 rooms. This was expanded to 50 rooms in 1989. Also in 1982 the first 48 Independent Living Units were constructed in the Paling Court area.

The next significant addition occurred in 1994 when the Mary Mackillop Hostel was constructed together with some additional Self Care Units. Since that time growth has steadily continued and Carrington now includes 214 Hostel Rooms and 264 Independent Living Units. Grasmere Terrace Facility was opened in 2009. Seventy new self care units were completed for occupation in February 2010.
